Bodegas Cota 45, established in 2012 by Ramiro Ibanez in Sanlucar de Barrameda, Andalusia, was inspired by his work as a wine consultant in local wineries. The name Cota 45 signifies the optimal height of 45 meters above sea level, where the finest albariza soils are located, known for their exceptional limestone composition found in the Jerez area. Their wine is crafted exclusively from 100% Listan (Palomino) grapes.

Decanting the wine before serving is a choice that can enhance its flavors, typically for a period of 30 to 60 minutes. Bodegas Felix Callejo, a family-owned winery established in 1989 and now managed by the second generation of the Callejo family, is situated near the village of Sotillo de la Ribera in the Burgos province of northern Spain. The winery, started by Felix and Pilar Callejo, utilizes grapes from 27 vineyards in the area, which feature a variety of soils ranging from gravelly former river beds to clay loam.

The vineyards grow a diverse selection of red and white wine grapes, including Albillo Mayor, Merlot, Garnacha, and Tempranillo (known as Tinto Fino in Sotillo de la Ribera), with the latter being the sole grape used in their rich red wine. The Majuelos de Callejo, harvested from a single vineyard with gravel soil, displays a vibrant ruby red color and a highly aromatic bouquet with notes of blueberry, plum, pepper, chocolate, leather, and toasty wood. On the palate, the wine reveals a concentration of red and black fruits, complemented by hints of cinnamon, nutmeg, a robust tannic structure, balanced acidity, full body, and a long, velvety finish.

This wine pairs excellently with grilled meats or roast lamb.

Decanting is a choice, recommended for 30-60 minutes prior to serving. Bodegas Felix Callejo is a winery owned and operated by the Callejo family. Established in 1989 by Felix and Pilar, it is currently managed by the next generation of Callejos.

Their goal is to reflect their hometown, Sotillo de la Ribera, by producing a variety of organic wines. Sotillo de la Ribera, situated in the Burgos province in northern Spain, is a stunning location for grape cultivation, standing at an elevation of 930 meters with diverse arid soils. Bodegas Felix Callejo leverages this environment to grow different grape varieties such as Merlot, Albillo Mayor, Garnacha, and the primary grape in their notable red blend, Tinto Fino (Tempranillo).

The Parajes de Callejo is a delightful Spanish blend, filled with aromas of ripe redcurrant, blackberry, toasted oak, and cocoa. This wine consists of 87% Tempranillo, complemented by Grenache and a touch of white Albillo Mayor. It offers a rich taste profile, a solid structure, and flavors of dark fruits, enhanced by hints of spice, mineral, and menthol.

It pairs wonderfully with charcuterie, smoky red lentil dishes, and cured cheeses.

You don’t have to decant it, but it is recommended to open the bottle half an hour before serving. Forjas del Salnes, established in 2005 by Rodrigo Mendez and oenologist Raul Perez, is widely regarded as one of the most exciting and innovative wine producers in Galicia. Since its inception, Forjas has focused on reviving ancient Galician grape varieties and crafting Albarino from old vines using organic methods.

Their wines exemplify their ethos and reflect the unique terroir of the region: vibrant, mineral-driven, with rich flavors and impressive aging potential. Goliardo A Telleira is made from Albarino grapes sourced from 45-year-old vines near the coast. The wine undergoes fermentation and aging in large used barrels before being bottled and submerged in cages 30 meters deep in the sea for an additional 3 months.

It boasts a fragrant nose of ripe stone fruit, subtle spices, floral hints, and minerals. On the palate, it reveals complexity and aging potential, showcasing a creamy texture, profound minerality, pronounced saline notes, and vibrant acidity. This wine will benefit from some time in the cellar.
